Riojan style Chorizo Sausage

4 servings ingredients::
·         280 gr. of fresh mini Chorizo Sausage.
·         350 gr. of Tomato Passata.
·         1 glass (150ml) of cooking red wine.
·         2  garlic cloves.
·         ½  onion.
·         1 dried bay leaf.
·         1 sprig of fresh thyme or 1 of a teaspoon of dry thyme.
·         A pinch of salt.
·         Peel and chop the onion.
·         Wash the bay leave and the thyme if fresh.
·         Place all the ingredients (Onion, garlic, bay, thyme, Chorizo, Wine, tomato and salt) in a saucepan.

·         Heat the saucepan over high heat until boiling, then lower to a gentle simmer. Cook for 45 minutes.
